Burger Month!
Seriously Though, a month dedicated to burgers? That is pretty epic. .I made a Caprese Burger for this last year, and decided that this time I would go in an entirely different direction. One thing that I did do again though is used a mixed meat. Instead of pork and veal, I went with Beef vs Bacon, a beef and bacon blend as you probably guessed. It is produced by Porter Road in Tennessee, and is perfect for this Stuffed Campfire Burger. I may have gone a little overboard by stuffing it with Bacon Cheddar, but no, I didn’t. It was the perfect cheese.

I made these burgers beforehand and brought them along on a Cub Scout camping trip. They grilled up over a hardwood fire on the beach, and made for a great culmination to a fun day exploring Fire Island in Northport, Maine. The other leader said “I don’t mean to sound like a commercial, but the cheese just exploded into my mouth.” So, I think they were a hit. And seriously, Bacon burgers stuffed with Bacon Cheddar? Yeah, they were good.
Fire Island Campground
Fire Island is a small private campground run by Bill and Marty Leavitt. They have run a Cub Scout Day Camp there several years, and allow troops and packs to reserve the site throughout the year. It is part of the Katahdin Area Council in Central Maine. Certain facilities are only available during the summer months, and it can get quite cold by the ocean during the winter, so winter use is rare. We were the first Cub Pack to use the site this year, and it was the perfect adventure location.

Stuffed Campfire Burger
This Stuffed Campfire Burger wraps two patties of beef and bacon goodness around cheddar cheese, with more bacon... yeah bacon...
Ingredients
- 2 lbs ground beef/bacon mix
- 6 oz bacon cheddar cheese
- 1 beefsteak tomato
- 4 oz crispy fried onions
- 8 burger buns
- Curry Ketchup
Instructions
- Form meat mixture into 16 approximately 2 oz balls
- Working a few at a time, flatten the balls out into patties
- Top half of the patties with shredded cheese
- Cover with another patty
- Seal the edges carefully
- Keep the finished burgers separated with parchment, and freeze for 1 hour.
- Start your fire.
- Place a grill grate over the fire and wait for a good bed of coals (not much flame)
- Cook burgers 5-7 minutes each side.
- Top with tomato and crispy onions and condiments of your choice.
Notes
Clearly you can make this happen over a grill, and don't need to get a campfire going to enjoy a good burger. But then, why wouldn't you want a campfire?
