So, I have been having oven issues. After fighting with an electric oven that won’t hold temperature for a few weeks, I’ve broken down and ordered its replacement. Gas, because that is the way to go, and much better with all of my cast iron. But things can never be easy, so after several delays, unattempted deliveries and winter weather, my new oven has arrived. Several days after the scheduled hookup… Almost two weeks without a stove or oven, I’ve been giving the crock pot a good workout in the interim. Pretty happy with the results.
Can you roast a chicken in a Slow Cooker?
In a word, yes. My goal here was to replicate a roasted flavor, and not end up with a bland liquid mess at the end. The color that this chicken turned out is proof enough. Not a white tasteless mass, but a perfectly golden bird.
What do you need to make Chicken in the slow cooker?
The ingredients are pretty basic here. I used a whole chicken, separated, but you can use parts if they’re on sale. I would personally mix dark and white meat for the flavor. Straight breasts aren’t going to come out quite the same.
- 1 Whole Chicken
- 1 Medium onion – diced
- Olive Oil
- Salt and Pepper
- 1/2 cup of cooking sherry
Step 1: Separate your Chicken and remove the skin. Season liberally with salt and pepper.
This is important for the next step. A large part of the flavor comes from the pan sear. Save your carcass, once your chicken is done you can throw it in the crock pot with the remaining liquid, a quart of water and some salt to make a soup stock.
Step 2: Heat a large skillet over med-high and add 1 tbsp of olive oil. Add onions and chicken. Sear the outer layer of the chicken all around. Approximately 2 minutes per side. (good thing I have a hot plate 😉 )
Step 3: Add chicken, onion and sherry to the slow cooker. Cook on medium 4-6 hours.
Step 4: Remove chicken from slow cooker and serve whole or pick for shredded chicken.
Just look at that roasted color! So good! I mixed some up with a stir-fry and made chicken salad for lunch, and soup out of the rest. The sky is the limit with this one!

- 1 Whole Chicken

Notes
This is a great way to have a roasted chicken flavor when you can't stand by the oven all day. The quick sear gets it going, and the slow cooker does the rest.
