Campfire Breakfasts are the best.
Seriously. If you have the opportunity to rustle up a fire from last nights coals and set a cooking grate over it, people are going to wake up happy. Whip up some coffee first, and once you can get water boiling, you’re ready to cook.
Hardwood Campfires are the best cookfires
In the end, you use what you have available. But if you have some oak or maple handy, you will get a much longer high heat burn than pine. Softwood will flare up hot, but you’ll find yourself needing to feed it over and over. With good hardwood the burn is slower, and you can often set your pan right on the logs to cook.
This Easy Campfire Skillet Breakfast will make your Morning
I usually try to do most of my prep-work before I head out to the campsite. So I will fill a few Tupperware’s or plastic bags with chopped veggies and meat so that everything is ready to go when I get there. The also take up a lot less space and you don’t have many leftovers to truck around. And you can stuff your empty containers with whatever garbage you happen to create to pack out of the woods.
This recipe was made in a 10″ skillet, but you can go bigger if you want. If you double the potato and eggs it can easily feed four, and cook in a 12″ skillet. If you make some bacon in the skillet first, remove it once cooked, but leave the drippings. Then you can skip the olive oil. Crumble the cooked bacon over the top before serving, or put it on the side. You can never go wrong by adding bacon to breakfast.

Campfire Skillet Breakfast
With roasted potatoes, ham and eggs, this easy Skillet Breakfast is perfect for the campsite or the kitchen.
Ingredients
- 3 tbsp olive oil
- 1 Medium Onion, chopped
- 2 Russet Potatoes, cubed
- 1/2 cup sweet peppers, diced
- 2 cups cooked ham, cubed
- 2 eggs
- salt and pepper to taste
Instructions
- Make a fire, and set up a cooking surface over it. I usually grab some rocks and pile them until a charcoal grill grate can rest on the surface above the flames.
- Heat a medium skillet over the fire.
- When hot, add 1 tbsp of olive oil to skillet and quickly sauté onions, just so that they start to change color.
- Add potatoes and cook until they begin to get soft, 8-10 minutes.
- Add pepper and ham, cook 5 minutes longer.
- crack eggs into skillet (right over the top of everything), cover and cook until whites are set, 3-5 minutes
- Serve hot.
Notes
I made this recipe over a campfire, but feel free to recreate this in the kitchen. And add whatever other ingredients will make you smile.
