This Banana Bread Pudding is a perfect prep ahead idea for an amazing camping dessert. Roasted over the campfire, or baked in the oven, it is a surefire winner.
Cooking over a campfire is one of my favorite things to do outside. It doesn’t really matter what the weather is, we can always find a way to enjoy ourselves in the wilderness. And warm food around a roaring campfire is much more fun than sitting in the snow huddled around a micro-stove (though those definitely have a dear place in my heart when I am backpacking).
Campfire Bread Pudding – with Bourbon Sauce
When thinking about what to bring out for a winter overnight, options are actually pretty limitless. It is cold out, so refrigeration isn’t a problem. This bread pudding recipe came to mind as something that I could mix up at home, and leave in the car until we were ready to cook it. For a summer trip you probably want to keep this mixture in a cooler until you are ready for it. The Bourbon sauce really made this bread pudding come to life, it dries out over the fire otherwise. Watch your eyebrows when you light off the bourbon, it can flare up pretty quick. Also, the kids love this. Any time you can make a meal into a pyrotechnics show is an attention getter.
Why Stale Bread for Bread Pudding?
Stale bread is key here. Fresh bread will soak up the liquid and turn into a soggy mess. But after the bread has lost it’s freshness and appeal for snaking is the perfect time to make a bread pudding with it. The stiffer, drier bread will not turn into mush, but will still soak up all of the flavor. I used a Challah that I had made previously and put in the freezer and forgotten about. It came out just about perfect.

Campfire Banana Bread Pudding
This banana bread pudding is and easy delicious dessert for your next camping trip.
Ingredients
- 6 cups of challah bread - stale, and cut into cubes
- 1 stick of unsalted butter, melted
- 3 large eggs
- 3 cups milk
- 1/2 cup sugar
- 1 tbsp vanilla extract
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/2 tsp salt
- 4 frozen bananas - sliced
- Sauce:
- 3 tbsp butter
- 2 tbsp sugar
- 1 tbsp cornstarch
- 3/4 cup milk
- 1/4 cup corn syrup
- 1/4 cup bourbon
- 2 tsp vanilla extract
Instructions
- In a large bowl, stir together bread and butter.
- In a tightly sealing container, beat eggs, milk, sugar, vanilla, cinnamon, nutmeg, and salt.
- Stir in bananas and bread. Let sit 2 hours, or overnight.
- Pour into a 9" skillet and bake covered, over a fire (or in an oven set to 375) until a knife inserted into the center comes out clean. About 20 minutes. (roughly 40 minutes in the oven)
For the Sauce:
- Melt butter in a small saucepan
- stir in sugar and cornstarch
- Stir in Milk and corn syrup
- Cook, stirring continually, until the mixture comes to a boil.
- remove from heat and pour in bourbon and vanilla.
- Touch a burning twig to the mixture to burn off the alcohol.
- Stir together, and drizzle over pudding.
- Serve warm.
