These Banana Nut Pancakes are quick, easy, and will turn any morning into a special event.
If your kids are anything like mine, they probably get pretty excited for any chance to have maple syrup for breakfast. Pancakes, waffles, French toast. I’m pretty sure the only reason that they want them is because of that sweet amber goodness poured over the top. Personally, I don’t care for things too terribly sweet in the morning. I would rather get my morning rush from coffee. I’ll even add salt and garlic powder to my oatmeal, going for savory instead. But pancakes are always a crowd pleaser, and I try to mix things up for my own sanity.
With Pancakes, the possibilities are endless.
One thing that I do enjoy about pancakes is that you can throw pretty much anything into them and have it turn out. I have not had this experience with waffles, and have spent way too much of my time scraping burnt bits off of the waffle maker when I’ve tried to get creative. This morning I had a couple browning bananas on the counter, and figured that this was a good way to get them into the kids bellies without any complaints about brown spots. There is also a plethora of half full bags of nuts kicking around. I am not particular about the type of nuts in the recipe, just remember that if you are using walnuts that you should toast them first or they will be bitter. I used a mixture of pecans, almonds, and peanuts in these pancakes. After emptying the dregs from a few bags onto the cutting board, I chopped them all together and mixed into the batter quickly.
How should you cook these Banana Nut Pancakes?
I cook my pancakes on a cast iron griddle that I lay over two burners on my stove. But a large skillet or electric griddle will work just as well. And I love the little bit of flavor that is imparted by buttering the pan, even if it is already non-stick. That is just personal preference. Get your pan very hot to start, then turn it down to medium once you start cooking. Just make sure to tend to them carefully, they cook pretty quickly.

Banana Nut Pancakes
These Banana Nut Pancakes are quick, easy, and will turn any morning into a special event.
Ingredients
- 2 Cups All Purpose Flour
- 1/4 Cup sugar
- 1 tsp Baking Powder
- 1 tsp Baking Soda
- 2 eggs
- 2 Bananas
- 2 cups milk
- 1/4 cup vegetable oil
- 1/2 cup chopped nuts
Instructions
- Whisk together flour, sugar, baking powder & baking soda in a large bowl
- In a separate bowl, beat eggs
- mash bananas into egg mixture
- Add milk and oil to egg mixture
- Stir wet ingredients into the dry, mixing until lumps are gone.
- Fold nuts into batter
- Preheat a griddle or skillet on medium and grease with butter
- Pour batter onto griddle, 1/2 cup for large pancakes, 1/4 cup for smaller pancakes
- flip when bubbles appear on top, and edge appears dry
- cook 1-2 minutes on other side.
- Serve with more chopped nuts and maple syrup.
