Looking for that perfect Banana Bread? Just right for breakfast, dessert, or an afternoon snack? This is not your simple, quick and dirty banana bread. But the end result? There is nothing the Sourdough Foster.
It seems like one thing that COVID-19 has everyone doing is making banana bread. I’ve tried out a few recipes. Made some up, and modified some others. This is my favorite. It combines a little bit of Banana Foster, with a texture you can only get from sourdough. So good.
What do you need for the Sourdough Foster?
This ingredient list is a bit longer than I usually go with, but everything in this comes together like you won’t believe. You can mess with the spices a little if you don’t have allspice on hand, and while the ground flax adds a layer to the texture that I love, it isn’t 100% essential. And if you don’t have sprouted grain flour, whole wheat will work as well.
For the Banana Bread
- 2 Bananas, mashed
- 1 cup Dark brown sugar – divided
- 5 Tbsp butter
- 1/4 cup spiced rum
- 1/3 cup plain yogurt
- 1 cup sourdough starter – unfed
- 2 eggs
- 1 3/4 cup Sprouted Wheat flour
- 1/4 cup ground flax seed
- 3/4 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp cinnamon
- 1/8 tsp allspice
For the Glaze
- 2 Tbsp butter – melted
- 1/2 cup powdered sugar
- 1 Tbsp spiced rum
Putting it all Together
For the Banana Bread
- Preheat oven to 350 degrees
- Grease a 5×9″ bread pan
- In a skilled over medium heat, heat the bananas, butter, 1/2 cup brown sugar and rum.
- When the mixture starts to bubble remove from heat and allow to cool 2-3 minutes in a mixing bowl.
- Add yogurt, starter, remaining sugar and eggs. Mix thoroughly.
- Add flour, flax, baking soda, salt, cinnamon, and allspice. Whisk together into a frothy batter.
- Pour into the greased pan.
- Bake for 1 hour, or until an internal temperature of 210 degrees is reached.
- Remove from oven and allow to cool.
For the Glaze
- Melt 2 Tbsp of butter in a measuring cup
- add powdered sugar and rum.
- stir together until uniform, adding powdered sugar a tsp at a time if it appears too runny.
- drizzle over cool banana bread, slice and serve.
