Nestled in a Brioche Bun and topped with creamy Brie and maple-chipotle jam, this burger isn’t quite French, but not 100% American either. With ingredients sourced in Northern New England, it brings a flavor entirely unique to the plate.
Start off with good beef
According to their website, Snake River Farm’s American Wagyu beef “is the ideal combination of the exceptional intermuscular marbling of purebred Japanese Wagyu and the intense meaty flavor of traditional American cattle.” However you say it, this grind is what you want for those perfect burger patties.
Don’t Skimp on the Bread
For this recipe I used Brioche. There is a world of difference between the the feel and texture of a simple water-based roll and one loaded with butter, egg, and milk. The rich, delicate Brioche melts in your mouth, allowing you to take more delicate bites and truly savor the flavor combinations we’ve got melded together in this burger.
Toppings make the burger.
In considering cheeses for this burger, there only seemed to be one choice once I’d settled on the Brioche for rolls. Brie. This smooth, soft cheese melts perfectly into the burger for an amazingly creamy bite.
And the Jam. This is where the punch of this burger comes in. From Blake Hill Preserves in Woodstock, VT, the Spicy Vermont Maple & Chipotle Chili Jam added all the flavor we could want. Kick your burger up a notch with one of their savory or spicy jams. Yum!

Acadian Burger
This burger blends some amazing smooth and rich flavors together, with a punch of spice at the end!
Ingredients
- 1 lb ground Wagyu
- 1 tsp Ooomami seasoning
- 1/2 tsp salt
- 3 Brioche Buns
- 4 oz Brie
- 3 tsp Maple Chili Jam
Instructions
- Combine ground beef and seasonings in a bowl.
- Shape into 3 equal patties.
- Grill to perfection over wood or charcoal.
- Place patties on Brioche rolls and top with Brie and Jam.
- Enjoy!
