How do you make a Campfire Pizza?
Pizza is so well associated with ovens, that a “pizza oven” refers to a large, heavy, high heat oven, that may or may not be used to cook pizzas. Not something to pack into the woods. Grilled pizza is also all the rage now. But to bring a stand and grill grate with you on a camping trip may be a little much. When camping, I am all about multi-purpose items. For me, a large Dutch Oven is about as useful as you can get for cooking gear. It can double as a pan or pot, and actually (maybe it is in the name) function as a handy oven as well.
I have done a lot of baking in Dutch Ovens. Mostly breads, and mostly inside of a conventional oven in a kitchen. Well, my new tripod setup made a campfire baking experiment hard to resist. Not to be timid, I skipped the whole “lets test this with something I already know how to do” step and went right for something new.
I first tested this recipe by browning the ground lamb ahead of time and that stuffed pizza will be remembered by the kids as “having the black stuff on the bottom. I then tried leaving it raw to cook within the bread. This version of it produced a less soggy, more crisp (but not so burnt) crust and perfectly seasoned lamb.
Hopefully that first try will soon only be remembered by the lessons it taught me. This one is a keeper.

Campfire Grilled Pizza
This lamb stuffed campfire pizza is grilled inside a Dutch Oven, and will have mouths drooling on your next camping trip.
Ingredients
- Dough
- 2 Cups warm water
- 1 tbsp active dry yeast
- 1 tsp sugar
- 4 Cups Flour (King Arthur All Purpose or Bread Flour) divided
- 1 tbsp Olive Oil
- 1 tsp course salt
- Filling
- 2 yellow onions
- 3 cloves garlic
- 1 large bell pepper
- 24 oz ground lamb
- 1 tsp cumin
- 1 tsp paprika
- ½ tsp salt
- ½ tsp pepper
Instructions
Make a fire
Make the dough
1) Combine water, yeast and sugar in a heavy bowl, mix thoroughly, let sit until yeast bubbles.
2) Add 2 cups of flour and oil, mix quickly with a sturdy spoon
3) Add salt and remaining flour, mix until it becomes shaggy
4) Fold and shape together the dough by hand until it forms a cohesive ball, cover and set aside.
Make the filling
1) Heat a large Dutch oven over the fire
2) Lightly coat with olive oil, then add onions, garlic and peppers
3) Sauté until onion is translucent
4) Remove from heat
5) Add lamb and spices, combine until well mixed (do not put on heat)
Put it together
1) Divide dough into two equal portions
2) Shape into a ball, then roll out ½ the dough into a large flat circle on a floured surface
3) Transfer dough onto a pizza peel or cutting board that has been dusted with cornmeal or flour.
4) Place filling onto dough, covering evenly, up to about ¾” from the edge.
5) Wipe out your Dutch oven and heat it over the fire
6) Shape into a ball and roll out the rest of the dough into a similar round to the first.
7) Wet the outer edge of the lower dough, then cover dough and filling with the second half, pressing to seal, and slightly rolling the edge under.
8) Carefully slide pizza into Dutch oven and cover.
9) Check at 20 minutes, then more frequently. When upper crust is dry and bottom is crisp, it is done.
10) Carefully remove from heat and Dutch oven.
