This sourdough pizza crust is incredibly easy and uses starter discard, so it’s a great recipe to use while growing your sourdough starter.
So, I started a sourdough starter last week, and have been trying out every recipe that I can think of for using my daily discarded starter. There’s been pancakes, I fried some up for a quick sandwich, made a whole loaf of bread out of some, and now this pizza. I really was a little dubious about how slowly it was rising (having pulled the starter out of the fridge probably didn’t help). But it rolled out into two sheet-pan sized crusts, which is what I would typically get out of a yeast bread with the same quantities. It was also much tougher and elastic. Things that would have torn my normal pizza crust didn’t phase it, and I was able to get some of the thinnest pizzas that I have made.
I cooked these pizzas on a propane griddle, which acts much like a baking steel. I think that a stone would work just as well, or even over a grill.
🍕 Ingredients for Sourdough Pizza
- 1 cup un-fed sourdough starter
- 1/2 cup warm water
- 1/4 cup olive oil
- 2 1/2 cups all purpose flour
- 1 tbsp course sea salt
🔪 Directions
- In the bowl of your stand mixer, combine all ingredients.
- Mix for 5-7 minutes with a dough hook, until the dough cleans the bowl and wraps around the hook.
- Transfer the dough into a greased container, and let rise for 4-6 hours. it should double in this time, though it may take longer depending on the vitality of your starter.
- Divide in two, and shape into balls.
- Let rest 30 minutes.
- Preheat oven or grill with a stone or baking steel to 500
- Roll out thin for a crispy 16″ pizza, or press into a 12″ for a thicker crust.
- Top with marinara, pepperoni and mozzarella (or whatever you desire).
- Rub the crust edge with a olive oil / salt mix.
- Cook on the hot stone or steel for 8-12 minutes, until crust is browned on bottom.

Notes
This will rise much better with room temperature starter than starter from out of the fridge. If you feel inclined, you could also feed the starter and let it do it's thing for a few hours to use ripe starter. I think that would be equally good, probably a little more airiness to the crust.
