This short rib pasta recipe is simple, and the slow cooker does all of the work. You don’t need many ingredients, and it will feed a crowd.
So life is pretty weird right now. People are buying cases upon cases of toilet paper. Everyone that can is working from home. Kids are finding new ways to get expelled from home school. Craziness. And, we’re all hungry. And thanks to the panicky purchases in many areas, there is a very weird and sparse assortment if things left at the store.
But you don’t need a lot for a good meal. In this recipe I use Korean Short Ribs. Korean Short ribs are cut from thin cross sections of the first four to five ribs, and have a nice ratio of meat to bone. Perfect for this recipe. Don’t worry too much about that though. You’ve got the last package of stew beef the store had to offer? Or an old freezer burned steak that you would have thrown out last week, but is looking awfully tempting right now? That will work just fine.
🍝 Ingredients for Short Rib Pasta
Open up those cupboards, you probably have most of this.
- 2 Tbsp olive oil
- 3 cloves garlic (or 1 Tbsp minced)
- 1 lb short ribs (or any other meat you have)
- 2 tsp coarse sea salt
- 28 oz crushed tomatoes (1 large or 2 small cans)
- 1 lb pasta
Directions
- Heat a large skillet over med-high
- add olive oil and garlic, stir for about 15 seconds
- add short ribs, sear 45 seconds
- flip ribs, sear 30 seconds
- transfer ribs, oil and garlic into your slow cooker
- add crushed tomatoes
- let cook in your slow cooker 6-8 hours
- shred ribs and remove bones
- cook pasta according to directions
- after straining, transfer pasta into slow cooker and mix well
- serve with fresh fontina or asiago cheese grated over it.
