Honesty time. I don’t typically eat a big breakfast. But I do love breakfast food. So usually our weekend mornings start with the kids eating cereal and me drinking coffee. I’ll try to get a run or workout in sometime before 10, and by 11 I’m ready for some serious food. This recipe makes for a serious feast, so if it’s just you, I would cut everything in thirds.

What do you need for this hash? Glad that you asked.
- 3 Tbsp Olive Oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 4 medium russet potatoes, chopped
- 1 lb ground chorizo
- 2 tsp course sea salt
- 1 tsp black pepper
- 1 pinch crushed red pepper
- 6 eggs
🍳 Instructions
Ready to make this all come together? Lets get started.
- Pre-heat oven to 375
- Heat a large oven-safe skillet over med-high heat
- Add olive oil and onions
- When onions begin to appear translucent, add potatoes
- When potatoes begin to brown on the edges transfer skillet to the oven.
- Heat a large skillet over med-high heat
- Add chorizo and stir as it is cooking to keep it broken up.
- When chorizo is well browned, add garlic, cook 1 minute more.
- Remove skillet with potatoes from oven and place over low heat.
- Add Chorizo to potatoes, mixing well
- In your now empty skillet, cook your eggs as desired. The chorizo oil should have it greased up nicely, if not, use butter or olive oil.
- Serve and enjoy (I piled mine on top of some salad greens for a “healthy” meal, but you do you.
