Most people aren’t thinking shrimp scampi when they are looking for a quick, easy, and cheap meal. Maybe they should be.
Ok, before you say it. This is made with regular old grocery store shrimp, not the more elusive and illustrious Dublin Bay Prawn. But, if you’ve ordered Scampi in the States, it was probably made with Gulf Shrimp just like this one. And yes, it was cheap. This entire dish cost about $6 total, and fed three people.
🍤 Ingredients:
You really don’t need much to pull this dish off. I was inspired by $4.99/lb shrimp, and $0.50 bags of frozen veggies.
- 3 Tbsp unsalted butter
- 2 cloves garlic, minced
- 1 lb raw shrimp
- 1/2 lb pasta (spaghetti or linguini)
- 1/2 lb frozen vegetables, thawed
- 2 Tbsp Olive oil
- 1 tsp dried Dill
- 1 tsp dried Basil
- 2 tsp salt
- 1 pinch red pepper flakes
🥘 Directions
Once your water is boiling, this dish is a go. Everything else should take about as much time as cooking the pasta.
- Bring a pot of salted water to a rolling boil
- Heat a heavy skillet over medium/high heat
- Add Pasta to boiling water
- Melt Butter and sauté garlic until starting to brown (1 minute)
- Add shrimp to butter and cook, stirring regularly, until they start to turn pink.
- OPTIONAL: remove par-cooked shrimp from heat and remove tails, then return to skillet.
- Add vegetables, olive oil and all seasonings to the skillet.
- Cook 2-3 minutes
- Strain pasta, then add to skillet. Mix thoroughly, then remove from heat.
- Serve warm, with shredded or grated cheese on top.
