Apple Season is Upon Us!
There are apples everywhere. My kids are picking them off of branches in orchards, parks, and peeking over the fences of neighborhood yards. There are so many types readily available in New England that everyone has two or three favorites. Pretty soon they’ll be begging for apple pie, but for right now I am trying to hold them off with pancakes, and at least tell myself that it might be a healthy breakfast.

Why Apple Pie Pancakes?
I suppose I could settle for regular pancakes, maybe even throw some apple slices on top. But I think the key to happiness in the kitchen is variation. S long time ago I was out of vegetable oil and looking for substitutes. Amazingly, I found that an apple or banana could actually fill that void in some recipes. That was the first time that I grated an apple into the pancake batter.
I have experimented with several variations since then, and actually like how the pancakes turn out with the apple added as an additional ingredient instead of a substitute. I had some maple sugar that the folks at Coombs Maple had sent me, and a lonesome can of Red Ale sitting in the back of the fridge. Knowing that beer can add an extra bit of leavening to recipes, so it seemed like a good idea. I was not disappointed. The kids loved these, and the texture was perfect.

How Did the Apple Pie Pancakes work out?
These Pancakes really did taste like Apple Pie. They were great with just a pad of butter on top, and decadent with maple syrup. If you really wanted to go all out, you could throw some whipped cream on there, but this was a Friday morning breakfast, not a Sunday brunch extravaganza.

Apple Pie Pancakes
These pancakes are light, fluffy, and taste like warm apple pie
Ingredients
- 2 Cups All Purpose Flour
- 1/4 cup Maple sugar
- 1 tsp Baking Soda
- 1 tsp Baking Powder
- 1 tsp Cinnamon
- 2 eggs
- 1 cup Milk
- 1 cup Ale
- 3 tbsp Vegetable Oil
- 2 apples (shredded)
- Sliced Apples for garnish
