First off, what is Corned Beef
Corned Beef is made from Beef Brisket, a tough shoulder cut. There are several ways to make this part of the cow tender enough to eat. Corned Beef uses a brine with large “corns” of salt, slowly softening the meat and adding flavor.
Why do the Irish eat so much Corned Beef?
They don’t. While Corned Beef may be synonymous with St. Patrick’s day in America, it is not a staple of the Irish diet by a long shot. Much like you are unlikely to find spaghetti and meatballs in Italy, Corned Beef and Cabbage is a dish strictly associated with Irish-Americans, largely due to what was affordable at the time of their mass immigration to the United States.
Extra Corned Beef? Make an Irish Burger!
Sometimes a bit of inspiration is all you need. While walking through the grocery store the other day, I saw the post St. Patricks’s day sale on corned beef. Normally I would be pretty well over corned beef by March 20th, but at less than $1.50 / pound, there was no way that I could turn it down. So I grabbed a relatively small brisket and threw it in the cart. Cabbage was also about 30 cents a pound, so that went in as well. I knew the kids would revolt if they saw corned beef and cabbage again so soon, so I decided to get creative. This burger is the result.
I take every chance to cook outside
The thermometer hit 45 for the first time in weeks, and we decided that it was worth spending the day outside (even with all the mud), so we packed our way out to a local campsite and set up a fire in the quickly melting snow. I couldn’t get my skillet hot enough sitting on a grill grate, so I put it directly into the flames to sauté the cabbage and potatoes.

Irish Burger
This Irish themed burger will have you wishing corned beef was easy to come by all year round.
Ingredients
- 1/2 lb corned beef, ground coarsely with seasonings
- 1 lb ground beef
- 2 cups shredded cabbage
- 1 medium potato
- 6 oz of Guinness Stout
- salt and pepper to taste
- 4 slices swiss cheese
- 4 burger buns
Instructions
- Place your meat grinder and attachments in the freezer for at least 60 minutes.
- Cut your corned beef into roughly 1" cubes and place in your freezer for up to 30 minutes.
- Set up your grinder for a coarse grind and grind the brisket, mixing seasoning packet in as it grinds. Run through the grinder twice if desired.
- Mix all of the ground beef together and form into 4 patties (do not add salt).
- Fire up your grill of choice.
- With a box grater, shred your potato into the cabbage, season with salt and pepper.
- Heat a medium skillet on medium heat and coat with olive oil.
- Add cabbage mixture to skillet and sauté until just browning.
- Add stout to skillet (drink the rest of the bottle while grilling)
- Sauté until cabbage is soft
- place burgers on hot grill, cook approximately 7 minutes per side
- place cheese on burgers to melt.
- Remove burgers from grill and place on buns.
- Top with cabbage mix.
- Serve with more Irish Stout.
Notes
I cooked everything over an open fire at a campsite, but you can do this on any BBQ grill, or a stovetop griddle.
